Preparation and Cook Time

Prep time: 5 min
Cooking time: 35 to 45 min

When it comes to most everything, but especially to food, I’ve got intense choice anxiety. From choosing recipes to grocery shopping, having choices stresses me out. That’s why Blue Apron has been so great. Each week, they give me six choices, and I pick three. Then they send me all of the ingredients I need, so I don’t have to decide between two seemingly identical looking boxes of pasta. Through it, I’ve also tried lots of different types of food that I never would have sought out on my own.

But sometimes, the prep and cook time on the recipe card lies.

Around 6:15pm, I called my friend Breanne for a scheduled phone date. Peel and boil fingerling potatoes. She needed to run to grab drinks with a friend, so I called my mom to catch up at 6:33pm. Mince garlic and finely chop kale. I gave my mom the run down of an interview I have coming up next week, telling her about the questions they’re planning to ask. Season and cook the steaks. I got an update from her about her classroom blog and how much her students love blogging and even more so love leaving comments for each other. Sauteé the kale with garlic. I asked for updates on their house construction, gave some updates on my plans to tackle my impending finals, and we made plans to do interview prep this weekend. Brown the potatoes. At this point, it was 7:28pm, and I hung up with my mom.

And I still wasn’t done! Last step: make the sauce for the steak.

At least the meal was thoroughly worth it!
